Improve the sanitization of the settings being saved so checkboxes get treated nicely

This is a major update to the settings page and as such, it requires a reset of the settings back to defaults. This will be done automatically after the plugin updates so you should visit each sub plugins settings page to rejigger your own personal settings back to how they were before.
